Kilt-Lifter Wee Heavy

10 gallons, all-grain: OG: 1.081; FG: 1.018; Bitterness: 36 IBUs

Ingredients:

• 30 lbs. Belgian pils malt
• 2 lbs. British crystal malt, 40° Lovibond
• 1 lb. DeWulf-Cosyns Special B
• 2 lb. DeWulf-Cosyns caraVienne malt
• 1.75 oz. Perle hop pellets (8% alpha acid, 14 AAUs): 0.75 oz. (6 AAUs) for 60 min., 1 oz. (8 AAUs) for 30 min.
• 2 oz. Hallertauer pellets (4% alpha acid, 8 AAUs): 1 oz. (4 AAUs) for 60 min., 1 oz. (4 AAUs) for 30 min.
• 2 Tbsp. Irish moss
• Wyeast 1968 (London ESB ale)
• 2/3 cup corn sugar for priming

Step by Step:

Mash grains in 11 gal. water near 172° F. Target temp is 155° F. Hold at 155° F for 60-90 min., or until conversion is done. Sparge with 5-6 gal. water at 170° F, collecting 12 gal. wort.

Total boil is 60 min. Bring to boil and add 0.75 oz. Perle hop pellets. Boil 30 min. Add 1 oz. Hallertauer pellets and 1 oz. Perle pellets. Boil 25 min. more. Add 1 oz. Hallertauer pellets and 2 Tbsp. Irish moss. Boil five min. Cool and pitch an active starter of Wyeast 1968.

Keg or bottle when fermentation is complete. Don’t rush it. This is a big beer.
